Oh boy! I'd get a cat with litter box, food, toy etc etc.
I'd get a track dedicated bike, use the money to buy insurance + register for local track + beginner lessons etc. I'd get a Leader 722TS frame set, Miche Advance/Sugino 75 crankset, Mavic OP laced to Formula wrapped in some Michelin Pro Race3/ Vittoria Open Corsa Evo Cx, Keo Max 2 + cheapish road shoes, maybe a nice road helmet, Atoms/Ions/S-Works, SRAM PC-7X and save the rest of the money if I have any left.

2010 Specialized Langer. Saw one at my LBS going for $500. Solid bike for that price.
Otherwise shop around, you have enough to get a good bike at the LBS, or check Craigslist.

What are you going to do with the bike, daily rider or track?
I'd search Craigslist for a good used bike that someone has spent $1,000 on new and is selling for $500. They're not that hard to find. That's how I got my first fixed bike, a Soma Rush, which has been a perfect commuter/daily rider. The other nice thing about a slight used bike (other than the price) is that it will likely already have a few scratches and dings, so you can just enjoy it without worrying about keeping it perfect.

Langster or Sputnik are good choices, but it is hard to find a sputnik for a test ride. Many more Langsters out there, and the seem to have good resale value on craigs list.
