Redishing rear wheel - how far can it go?

Moving the 53T chainring to the inside position will help, as will a shorter spindle in your BB. You can usually scronge a used spindle at yoour local LBS for a buck or two.

This may be a dumb question but can't you just move the 53 chainring to the middle?

The wheel ought to be fine. That's exactly what I did with mine.
And just so you know, before I did that, I ran just 5 speeds with the big ring in front too. You don't need that little ring in flat areas.

If you are really broke, you can try flipping the exisiting spindle (assuming a cup/cone BB), as the non-drive side is often shorter than the drive-side.
