Bikes: Bridgstone X0-1, & RBT; Miyata 1000, 618 & 615

I'm 5'11" with a 31 in inseam. I ride a 58cm Miyata. It's just slightly big, but I love to be able to have the handlebars a smidge higher than the seat.

I'd look at a 56 and 58, as they will probably both work for you.
