99.9999% of brake calipers can be adjusted for pads to hit at the same time. It prevents initial mushy feeling when one pad hits before the other. It is not acceptable for the rim to be pushed out of true when one brake pad hits before the other as well.

The only reason not to center the brake is laziness.
