You have an interesting point, Centurion designed the bike (however people did that back then), but they outsourced the whole thing, whereas Trek went to lengths to build and test frames and geometry in-house.

I have wondered how Centurion talked Shimano to anodize their chain ring to match the shade of grey of the French Wolber rims.
Could be the Centurion simply fits you better. Armadillos also have notoriously high rolling resistance, so that could account for a 'slower' feel. Also, have you serviced the bottom bracket and hubs of the Trek? Could be the Centurion is better lubed with less friction in the system.

Or the Centurion just fits you better.
