Can't seem to drop any weight now.

(sorry for any grammar or spelling error I wrote this quick)
OK here is the back story of what is going on.In 2008 I got super cereal(southpark joke) about cycling, I joined a MTB team, I started thinking more about what I was eating, but still didn't change what I ate to much, I just tried to eat more fruit and vegs.I started training for this in the winter of 2007. I did some lifting and cardo until I could ride again outside.I dropped weight during the winter and got down to 225. I started at 235.So ten pounds before the season even started. Great right!

Well the season started I was riding min 100 miles a week, each day was little different type of ride. By the mid march I was up to 150 miles. I was doing one to two ride a week over 25 miles at a steady pace and keep my heart at about 70 to 75% of my max.(Max for me is 219)I had one day of hard hill repeats, and the rest where a mix of different trails(I have 4 different MTB trails I can ride to from my place)

In April the race season started, I had 4 races in April planed and I did them all.(Yankee Springs TT, [usac races]Pontiac Lake TT, Bloomer XC, and I had a 6 hour solo endurance race. I did very well I got 7th, 2nd, 1st,3rd.)I did 3 more races after this before I broke my back freeriding( I had to take it easy on the racing got a little burnt out.lol) Before I broke my back I was hitting 200 miles a week with no problem and was feeling great. During this whole time I was never counting Calories, I just tried to each more vegetables and fruits.I ate when I was hunger and I ate to get myself ready for races. I didn't feel like I was losing much weight during all this time. Everything thing pretty much fit the same, maybe a little looser in the pants but not much.Went from 40 to 38 in pants.When I was finally able to stand up and move around 2 weeks after my free riding crash I was 210 lbs. Once I started PT I was slowly gain everything back that I lost. ended 2008 at 235lbs.

At the start of this year I made it a point to eat even better to help out in the 2009 races season so i can get even better and lose even more weight. I cut my carbs down to maybe about a 1/3 of what I use to eat. I ate smaller portions of meat.(I already eat a ton of chicken) I stop eating fast food, thing with breading on them, things that are fried you name it. My snack where apples and Carrots. I ate two serving of vegs at lunch and dinner. I was feeling much healthier but I wasnt losing any weight. My riding load was the same has how I ended the 2008 season. I uped the my work outs in the gym during the winter has well.

At this point I bought a scale so I can watch my weight more closely for this season. It was April again and time to start racing again. I did one race and about a week later I became very sick. For a month I backed off from riding and working out to try and get healthy again(no health ins at this time now).I controlled my cal so I wouldn't add weight to me. I was eating 2000 a day. Which is about 1500 to 2000 less then what I would eat when I ride. I finally had to go into the hospital to get check out. I couldn't use my hands towards the end of the day at work one day so that sent to the ER right away. They are pretty sure I got mono, but couldn't figure out how I got. So now I am told to get has much rest has possible for at least the next 6 months. So no riding for me. The doc even said no sex.My Spline was so enlarged he was really worried. I had three ultra sounds done during that time the spline didn't get smaller until about the 5 month mark. During all this my daily cal count was keep in the 1500 and 2000 count. I was gaining weight during this time and could figure it out. I tried to cut my cal count down to 1500 during all this, most days I did but 3 out of the 7 days I ate 2000. I ate even more veg and fruit and even less and less carbs. My meat was basically the same.But I couldn't control my weight I was gaining.

Now that I am able to ride again, I do about 3 times a week and or workout 2 times a week.The weight isn't coming off at all. I am now right around the 240 mark. I am eating 1500 cal most days(5 out of 7 days),but never over 2500.

My question is could something have happen to me? And what is causing me to not lose weight anymore.I am holding steady now so that is good.I am looking for ideas of what could causes this to happen.
