Literally none whatsoever in the ranges you'll normally ride in:
12/25: 12-13-14-15-16-17-19-21-23-25
12/27: 12-13-14-15-16-17-19-21-24-27
The tighter cassette will look a little cooler. The only advantage I can think of to you for dropping to an 11T is that it will make your small ring more useful.
