@ akcapbikeforums: That's one of the reasons why I ended up replacing the Mate with something more modern, the "always on" thing was bugging the heck out of me too. I keep it in a safe place though, being original to the bike.
@ kpug505: Thanks! It's an older Canon 10D, nothing fancy by todays standards. I'd say main tricks are to get the camera low, to the bikes level, and to keep a shallow depth of field so you can get only the bike in focus and blur the background.
@ 4Rings6Stars: Found it in my LBS, it comes on the Torelly Tipo Uno bike. You can order it online as well, about $12 I think.
