They sound really stuck-up. They probably won't give you good service when you do go there.

Now this seems a bit odd to me, as it seems like the sort of people who buy $2000+ bikes are usually strong enough to spin up a hill in 39 front, 25 or 27 rear. There are exceptions, certainly, or Shimano wouldn't be selling a Dura-Ace triple for 2005.
