Have you tried the newer recipes for no-knead bread that you bake in a dutch oven? The bread is fantastic--like a crusty loaf from an artisanal bakery, but $1 a loaf instead of $6. It's almost no work, but the recipe I used does take nearly 24 hours from start to finish. I did carry the ingredients home on my bike, but all it takes is flour, 1/4 tsp. yeast and some salt and water.
