I'm not a fan of the knee over pedal concept, but it's certainly a decent place to start. You don't need a fitter to drop a plumb bob from the front of the knee to the front of the crankarm (the Andy Pruitt method). Saddle height has a basic starting point too. Set the saddle height so your foot is horizontal with the leg fully extended at the bottom of the stroke. This may need to be lowered is you pedal with little heel rise, but rarely is it too low. The idea is to produce about a 30 degree bend in the knee at the bottom of the stroke. All it takes is about 3cm rise of the heel to go from a fully extended leg to a 30 degree bend. Each 1cm of height change will alter the angle by about 5 degrees.
There is always the possibility of knee problems that no fitting will fix. I've had three surgeries for torn meniscus that a fitting would never cure.
