If you happen to be camping, I camp (tent) at the Portal RV campground in Moab. Its on the north side of town. Great location, really nice tent sites. I highly recommend it.

If you have the time, I also highly recommend you ride highway 128. The most scenic part is the lower section of the road. It follows the Colorado river. Even if you don't ride it, be sure to drive it in your car. Coming from the East, get off I-80 at the Cisco exit, and follow route 128 to Moab. The Portal RV campground is just a little south of the junction of highway 128 and highway 191.
