Yes, you can convert to threadless if you want. You'll need to make sure the steerer sizes remain the same - IE: 1" threaded to 1" threadless. You'll also need a new headset, a threadless stem and some spacers.

Having the knowledge that your bike uses a threaded steerer, you may have better luck looking for a threaded fork deisgned for old school touring bikes - these would most likely have canti bosses.

The real question is - why do you want to convert to V-Brakes? and what type of brakes are you converting from?
