Surly Cross Check 58 or 60 a better fit?

Here's the deal, I'm switching from a 59cm Steamroller to a Cross Check in order to fit larger tires and fenders. Currently, I'm debating whether to get a 58 or 60cm Cross Check after reading numerous posts on this question. I'm tall (6'4), have long legs and a short torso. In the past, I've ridden a very large Lotus frame with success, and also a very small 57cm KHS Flite 100, chosen for its top tube length of 57.5 equal to the Lotus, and rigged up with a tall mountain bike stem to get the drop bars high enough, with equal success. I'm concerned if I go with the 60cm Cross Check my stem will wind up pretty short with its long top tube. From what I've read, a longer stem equals more stability, which is part of the reason for this switch. If I go with a 58cm Cross Check, I believe a stem can be found with enough length and rise to get my handlebars high enough. Are there any drawback to the smaller frame, other than the cosmetic effects of a hight seat post and highly angled stem ? Thanks!
