The Cross Check is very stable with a long wheelbase and a 72 degree headtube angle. You will likely need a 110mm or 120mm stem, nothing short about that length.

I'm 6' 0" and use a size 60cm Soma Double Cross. Very comfortable & stable. I use FSA compact handlebars with a 110mm stem to reduce the reach to the drops.
