I think the elevation change will be completely negligible. However, you may have prevailing winds, in which case, it would be handy to be able to reverse the course if necessary.
It seems like Kingsville had a pretty decent tourist bureau, and they might could be helpful. I've driven through it, and remember the main road being 4 lane, but don't remember shoulders, etc.
Go to Google maps, use the "Street View" to see what the roads look like. It won't tell you what traffic is like, but you can get an idea.
On part of that route, you're parallelling some county roads, and if they are paved, they would be a good alternative.

I think I also drove out through where it says "Chapman Ranch", FM 70 and Co. Rd 8. That was very desolate (farmland, as I recall), very open land where you could potentially catch a LOT of breeze.
Another thought: Spring-Break college kids probably aren't up at 7:00 AM.
