I would definitely prefer plastic - I have a bike right now with aluminum fenders, and man - those things are super annoyingly noisy. They also need to get adjusted periodically, as they tend to get bent when I put the bike in and out of my car. I imagine plastic fenders would be better (though perhaps not perfect) on both counts.
