Bikes: '96 Litespeed Catalyst, '05 Litespeed Firenze, '06 Litespeed Tuscany, '20 Surly Midnight Special, All are 3x10. It is hilly around here!

I agree. I always cut the steerer long enough to require a 10 mm spacer above the stem. That gives you the option of raising the bars a bit if you decide to later.
