my 3 bikes display it quite well:
fixed gear- aggressive race geometry, nervous hands free in comparison to below despite 32 3x wheels with deep section DT Swiss rims that are 100% true
steel road bike- traditional road geometry, smooth and comfortable hands free, no problem getting things out of pockets/bottle cages hands free
mtb- this thing has like 10in between the down tube and front tire and an unbelievably long wheelbase, i can ride it hands free with no issues, around turns, and off pavement (maybe its because i dont care if i drop it though
)
i agree with you road fan that any bike set up well should be able to be ridden without hands, but you really notice a difference when you hop on two bikes at the ends of the spectrum.
