I believe the 5 speed hub is the X-RD5(W), with drum break. The gearing ratio is 256%.

• Gear 1 - 62.5% (-)37.5%
• Gear 2 - 75% (-)25% (Gear 1 + 20%)
• Gear 3 - 100% Direct Drive (Gear 2 + 33%)
• Gear 4 - 133.3% (+)33.3% (Gear 3 + 33%)
• Gear 5 - 160% (+)60% (Gear 4 + 20%)

On the Sovereign models the front hub is the X-FDD with 2.4w dynamo (no powering a back light), and on the Classic it's the X-FD.

The Sovereign's front lamp is the Busch and Muller Lumotec Retro, without standlight. I think the rear Pannier light is currently the Busch and Muller Toplight Flat.

That's all I know.

No idea about the sprockets.
