new bike fit - longer stem?

Was at the friendly bike store today looking at a Tricross Sport. The standover on a 58 felt good, but on the ride I wanted to spread out more, and had to put my rear over the back end of the seat, even with the seat pushed back on the rails. They suggested a longer stem (didn't have time to try that).

Does it make sense to buy a bike that needs a stem mod like that? Wouldn't I want more weight in the back? But what other options are there? (I do need a triple, so that limits things.)

I've budgeted for an instore fit too, I was thinking of asking them to have a fitter double check that they can fit me to this size. Would that be too obnoxious, seeing as they wouldn't make a sale if the fitter says "no"?

BTW: I'm 6'3" with a 33 inch (barefoot) inseam.
