Ive got a ton of nishikis and norcos. Ive got some nishikis that say designed by Norco on the rear chainstay.
I think Norco, or NORthern cycle COpany, bought Nishiki.

Nitto Grand Randonierre 135 Bars on a Nitto Stem - Not Sure, Id figure SR Stem/WIN bars, or Vetta Stem/WIN bars.
Diacompe Canti Brakes (Nice perf levers) - Sounds right, probably 500gs?
Leather bar tape - Most I saw had foam, or Vetta wraps.
Selle Italia Suede Saddle - Sounds right, most Norcos came with SI seats.
Suntour Symetric Shifters - Not sure, I know they came with Suntours, just dont know the model.
Suntour Cyclone Mark II Derailiers (GT model in Rear) Sounds right, most of mine have these.
Cranks are Sugino Custom with triple crank gears. Top gear is 52 tooth and rear cassette is Shimano . - Should be right, Suginos on most of mine.
KKT Pro Vic II Pedals - Right I have a number of them with these pedals.
Strong seat post - is it chrome or alum? I have a mix, some WIN chrome, some Sugino Fluted.
Suzue 3E and 3J Hubs with Araya 700C rims (36 front 40 rear) - Sounds right, the letters match most of mine.
