You raise a good point about getting out of sync. If you recorded on a windy day, for example, it would definitely be screwed up.
I think one way around that would be to incorporate a cadence indicator that would display on the screen what your cadence was during the taping--right next to what it is when you're riding on the trainer. Keep the two close together, and you'd probably keep up.
