Take a train/bus/plane to Syracuse lots of great riding and empty roads, anywhere from the flat of the Erie Canal Towpath to very challenging hills. Finger lakes, Lake Ontario are within a day's ride and the Adirondacks and Thousand Islands not far beyond that.
