Well, your assertion made me break out the spreadsheet and play with some numbers. I grabbed this kilo power profile from analyticcycling.com:

If the first five seconds of the power readings were off by 20% in one direction for the iBike unit, the overall impact on the average power over the 60-sec interval would be around 3%. I think this is a reasonable variation; near the claimed accuracy of a PT.
