From my past experiences, the only times I have had pinch flats (Other than hitting a pothole at 25 mph) is when I didn't have enough air pressure in my tires. This was usually the result of running late and not checking my tire pressure. I try and check my tires before every ride, even though sometimes I miss it. Have you considered the possibility that the flats are coming from another source? Have you checked the inside of your tires? Do you have spoke nipples coming through the rim tape?
