What's wrong with your Giant? You can put all the stuff your talking about on it and save some money to boot! You could use fenders similar to these: http://www.crudusa.com/product/27
The generator hub and small handle bar bag will bolt right on. I don't see spending a bunch of money on something you don't really need unless you just want too.

That's always good enough reason.
