It almost always requires 2 clicks to go down to the middle ring.
That sounds like it's not tuned right. Going from big to small should always be 1 click. Get it to a better mechanic or (even better), do a bit of hunting online (YouTube is a great resource) for some guidance on tuning it yourself. It should be just a thumbscrew at a cable adjuster, or maybe a Phillips screw on the FD itself.

Are you making a point to back off the power when shifting the FD? If you're applying any pressure to the pedals when you try to shift the FD, the tension in the chain will prevent it from shifting. What you need to do is turn the pedals just to keep the chain moving, but there should be almost no pressure applied through the drivetrain.

If the difference should be negligible on a well set up triple, then why bother with changing it.
