Giant makes an inexpensive carbon bike- the OCR composite 3 ($1600).

However, if you can only spend about $1600 on a bike, I think that you may want to consider sticking with aluminum or steel. I don't think you'll notice much of a weight difference. In fact, I lifted a Giant OCR composite 3 at my LBS and it felt heavier than my bike (Felt F70, aluminum frame, $980). Take one for a test ride, but I think you may be happier with an aluminum bike in that price range.
