You can probably build a bike that is right up against the minimum weight out of AL or CF. Pro riders don't just ride with they like the best, they ride what the sponsors provide. They want to win races and sell expensive bikes. Does anyone really think you need $3,000 worth of electric shifting to win a bike race. No, but if you win one using it, Shimano will make a fortune selling them to well heeled recreational cyclists that have to have the latest race goodies.
+1 all this aero/super light weight for 'the rest of us' started right after the 1984 Olympics. A SOTA racing bike is not the best choice for everyone.
