Tourist here. I'm actually on tour right now in Guangxi, China.

You cannot tour on a compact crankset. My lowest gear is 24 front 34 rear, and I've been using it every day for the past two weeks. I weigh 62kg and am a decent climber, although I'm not traveling particularly light.

The Sora rear dérailleur does not have enough capacity for both a triple crank and a mountain cassette. You need a long cage mountain dérailleur. LX is quite cheap and still better than Sora, so I recommend that.

Many tourists here use LX hubs. They're very reliable if properly adjusted. Hubs are generally not something you have to worry about on tour, unless you use an unsealed low end hub, such as the Shimano 2200 hub.

The Mavic A319 is a very good touring rim. It is the heavier and cheaper version of the A719 rim, which is considered to be one of the best touring rims available. Go for this wheel.
