I'm guessing it's just aesthetics. I gather what's happened is that Shimano brought out the "new generation" 5610 pedals a while ago (along with Ultegra and Dura-Ace), but then they wanted an even newer 5700 set to match the new 105 groupset. The same thing happened with the 6620 and 6700 Ultegra pedals.
