They are very stiff when they are new but the chamois softens up after a couple rides. The chamois in the Ultra II's are made in Italy and after a couple rides/washes, they are among my favorites. Cyteth makes the chamois for the Ultra shorts and bibs, at least the green ones used in the modern production. They are different than the chamois Cytech makes for Assos, Rapha or Gore but appear to be high quality.
My oldest pair is from August of '09 and I've worn them for thousands of miles without issues. Maybe it's just indiviual preference but I'd like to get your opinion after a couple rides/washes. Also, my wife washes all of my bike clothes (including bibs) in the washer and drys them on high heat setting. No issues to date.
