And there's the "double vs triple chainring" thing in front - I believe Ultegra use different deraillers for double and triple, while 105 uses the same derailler.
I don't know what that guy is saying about getting "decent used pair of 6600 shifters for pretty cheap on the eBay" - when I was looking for a pair of Tiagra shifters, I had to pay around $100. And those are a level below 105, two levels below Ultegra. On midrange road bikes, shifters can easily be the most expensive single component on the whole bike.
Umm.... Used 6600 shifter sets sell on eBay for $150-ish all day long. Sometimes you can even get a pair for well under $150. Ditto for Craigslist, depending on your local market. Compared to the $350 that the current generation Ultegra shifters go for, I'd say that qualifies for "pretty cheap".

The Ultegra FD.... I think is a double.
So bottom line seems like I would have to remove the granny ring to get it all to work which is not an issue as I've not used the granny ring ever. Hmm....
The granny ring shouldn't present too much of a problem with proper adjustment of the limit screws on the FD. Since you already aren't using it, you would just continue riding as if the 3rd ring wasn't there. It's the shifter that isn't gonna work with the FD, not the crank.
