It's not clear whether you are trying to make sure you eat enough or whether you are trying to plan how much food to carry.

That's only 35-55 miles per day. I'd say that 5000 cals per day seems excessive. It depends, of course, on how hard/fast you ride, hills, ambient temperature, etc...
How many cals do you eat on a 90 km day ride? That is, what does
your riding experience tell you about what you might need?
