Good points here. Places like Rocky Mountain Cyclery often blow out Al and C Easton stuff -- for the bars/stem/seatpost the weight difference is negligible and you can get a great price.

I did something similar to the route you're going on, expect I decided to skip on the "no name" carbon accessories. I didn't care for them as they were usually more expensive and heavy than a quality aluminum stem or handlebars.
