A few of your concerns with Google maps can be answered by switching to satellite view or, if it's available, street view.
I'm talking about things like shoulder size and road surface. In terms of the route doing strange things, you can drag the route to insert waypoints and force it to go the way you want it to.
Have you tried doing that? Sometimes it works. Sometimes you get some really wild results!!
