The hidden cables look nicer but provide a less smooth path for the gear cables than the old exposed cables.

I wouldn't exactly say that the shifting is worse but the setup is more sensitive to poor installation. If you go with them be sure to use genuine Shimano cables and outers and be pernickety about cutting the ends exactly square and ensuring there are no bits of wire fouling the cable movement.
