I was considering going with one of the nice light selle italia saddles, but decided that I couldn't afford it right after I got a new bike. I also wasn't sure how I'd like having a hard, thin saddles on my mtb. I decided to go with this instead: Sette Race Ti Leather Saddle. So far I love it. It has quite a bit of flex in it but it's pretty comfortable, and not too heavy at 198g (mine was actually a little lighter). And for the price of $25 it can't be beat.
