FWIW, the Vuelta wheels are nothing to sneeze at, especially the OP's XRP Pro's. For the kind of riding the OP is doing, I see no need to upgrade these. Saddle discomfort can be adjusted out for the most part, but saddles are relatively cheap.
EDIT: I own two sets of Vuelta Zerolite MTB wheels and a set of HD Corsa's, which are bomb-proof and spin so well you forget they weigh 2,400 grams.
