Interesting that you say that about Shimanos and Looks. I was under the impression that all the classic road pedal styles had some tendency to centre themselves.
I use Look Keos and there's no spring or anything to create a self centering force. You can ride at whatever angle you want, within the limits of the float created by the pedal/cleat interface.
