Removing brake levers from handlebar (part of quill replacement)

Hello all,

I searched for a like topic but couldn't find what I was looking for - my apologies if there's already a post on this and would appreciate your pointing me to it.

I am putting a longer quill stem on a recently-found 1985 Fuji Regis to try and make it more comfortable (never done this sort of thing before but want to try, then ask the LBS to ensure it is still safe). I have the 250mm quill but the old quill is the sort where you remove the bolt from the clamp but it doesn't open so you have to wiggle the bar through it (instead of a clamp that opens completely, i.e. 2 parts to the clamp instead of 1 - forgive me as I'm sure there is a more elegant term for this).

This means I need to remove one of the brake levers (with turkey/cross lever) from the bar before I wiggle it free, then once the new stem is on I will put the lever on the bar and the bar on the new stem. I want to properly remove the brake levers without messing them up - if anyone is familiar with this process, any assistance is appreciated.

I looked on parktools but seems to address only newer brake types. I removed the turkey/cross lever via a simple screw which goes into a red cylinder in the bar mount (and which apparently contained a spring which popped out). If I squeeze the main brake levers there appears to be a screw going perpendicular into the red cylinder, so this looks like the next thing to remove but I don't want to pop the cable loose either. The clamp holding the brake lever assembly onto the bar has no screw visible.

Anyway, I'm curious to do this myself but not sure where to find guidance or an exploded view of the assembly. Thanks.
