There are two parts to this concern: the risk of the theft event and the cost to recover from that event. I'm not sure if a $4000 touring bike is much more likely to be stolen than a $1000 one.

The other issue that relates to the cost-of-replacement are accidents.

There are subtle, practical reasons (engineering limitations) why all of the gears aren't usable or are duplicates (things like crosschaining issues and the length of chain and being able to take up slack).

The Rohloff hub is very cool. (Derailler systems work pretty-well, though.)
