Worthy stems for SS/FG

I'm doing a high-end build on a great '83 lugged Marinoni and want to bounce some topics off the SS/FG group since I'll be going that direction with the build.

The first of my dilemmas is the stem. The frame is a threaded 1" setup (my Chris King 2nut headset is sitting near me now) and I'd like to go with a quill stem to preserve the classic aesthetics of the build.

However, I'm 6'2 and a fit 190lb. I started racing in the late 70's and most classic frames fit me best with a 100-120mm stem length. I recall my old Cinelli 1A stem twisting and torquing so much on climbs that I could visibly see the movement (like, significant movement).
I've never broken a stem, but damn, did I worry about it in the day.
When I built my Tommasini Tecno in 2000, I used a Cinelli titanium quill stem and loved it.

Fast forward to my new build.

I'm inclined to think my main options are limited to track (NJS) stems, such as the Nitto Jaguar series.

Does anyone here have any experience with the aluminum and steel versions that can relate their experiences?

Are there any other REALLY stiff quill stems out there these days?

This Nitto grabbed my eye, but the quill version is $180 o.O
