I have to ask. You seem to be really against this stuff. Did someone you know die or something from following a "lower than what you eat carb" diet?
FWIW, I don't eat bacon, I don't eat a lot of red meat. I do eat lots of fish and chicken, fresh vegetables everyday, eat some low GI fruit, take my vitamins, drink 4 litres of water a day. I don't eat bread very often, I restrict the rice and pasta to small portions, I eat full fat sour cream on my potatoes, butter, not margarine, and overall probaly eat mostly the same as you.
Is it possible you don't fully understand what a lower carb diet is?
I guess I don't eat cereal anymore, no more bagels and such, chips and candy are out. Pretty much think I eat better now than I ever did in my life.
But like I said, what makes me happy shouldn't have to make you happy, so let's agree to disagree about carbs, and just be happy. I' going to get on my MTB bike now and ride home.
