Newb lubricant question

...I'm new to these Forums, so I have probably missed many a discussion on this subject. And I expect I'm likely to get as many different answers as people giving them, not to mention the fact that there are a plethora of different products out there. But...

...what would the folks on here recommend for greases and oils to use for the different applications on, say, a C/V bike, such as:

--repacking hub bearings

--repacking a headset

--oiling a freewheel

--oiling the chain, pedals, etc.

(I didn't mention the BB because I have already replaced that with a sealed cartridge unit)

...the reason I ask is simply that in just the last 20 years, or even less, everything has changed so much, including the simple stuff like lubricants, and I would simply like to get and use products that are reasonably good. I've got a few different bike oils and greases that I accumulated over the years, but the operative words here are 'over the years' (late 80s and after)...some of them have gotten old and I'm not sure I should use them now...and there are probably newer and better products out there now, anyway...

...so, what do the 'old hands' on here like to use?...
