Bikes: '96 Litespeed Catalyst, '05 Litespeed Firenze, '06 Litespeed Tuscany, '20 Surly Midnight Special, All are 3x10. It is hilly around here!

No, the items that must match for the number of speeds are the shifters, cassette and to a lesser extent the chain. You can use a chain from a higher number on a lower number drivetrain but not the reverse. For example, you can use a 9-speed chain on an 8-speed drivetrain but not on a 10-speed.
