I ride like riding rails to trails like you describe. (i.e. Katy trail, Tunnel Hill trail which I plan to ride for the 6th time this weekend, etc.) I picked up a Trek cychocross bike which does well on the crushed rock type surface. Takes the punishment but is as responsive and quick as I want. I ride with 32mm tires which are wide enough for me.
