Well, I decided to contact Citizenbike directly and ask about the G2 handlebars and this is their response:

We do have an adjustable height handlebar stem for the GOTHAM2.
However, please contact us at 1-800-682-9579 (Monday - Friday, 10am -
4pm EST) to place your order and we'll make sure we get you the most
appropriate stem style.

Not sure what the alternate handlebar looks like or does to the specs (weight), but apparently, it is available.
Anyhow, I guess it's immaterial at this point. I decided to order the Downtube Nova (two of them actually). Hopefully, they'll live up to all the good things people have said about them.
