First time I ever heard anyone describe Mississippi as hilly. I live in Austin and it's pretty hilly by my standards. I like it. I also have lived in areas that were pretty flat and I liked them as well. Different kinds of riding, kind of like brunettes and blondes are both good.
I don't know that MS is "hilly", but lots of nice rolling area on the edge of the Delta and in the NE. Highest elevation appears to be about 800 ft.
